The increased production of fructose from over-ripe edible portion of Anacardium occidentale wascarried out on a laboratory scale by acid hydrolysis method. The percentage of glucose and fructose in theedible portion of the fresh over-ripe apple of Anacardium occidentale are given as 2.1 and 5.2respectively while the total available carbohydrate, water content and titratable acidity (ml. 10% NaOH ≡100g apple) are 13.14, 89.54 and 72.21 respectively. The effect of temperature and acid concentration onthe rate of formation of fructose and the optimal time for hydrolysis were determined. The optimumcondition for acid hydrolysis was determined to be 70oC using 0.2 M acid concentration in 20 minutes.
